Old Bay Turkey, Turkey with a Maryland Twist:) with FDA Turkey Cooking Time Sheet

Old Bay Turkey Breast… ready to be carved:)

This is my favorite way to prepare a Turkey.  I love it because it requires very little attention; and, it always turns out super moist.  My fellow’s family requests my Old Bay Turkey at every holiday meal… they are from Maryland, the home of Old Bay.  This recipe can be used on a whole turkey, a turkey breast or even chicken:)  Make sure that you have some fantastic creamy mashed potatoes to soak up the fantastic drippings:)  Enjoy..Happy almost Gooble Gooble Day:)

Old Bay Turkey

Adapted from Moist & Tender Turkey Breast from Allrecipes

  • 1 Turkey (or turkey breast, chicken)
  • 1/2 cup melted unsalted butter, at room temperature
  • 3 cups homemade Turkey stock… (or good quality low sodium chicken or turkey stock)
  • 1/2 cup Duke’s Mayonnaise (use real mayonnaise here.. no low fat stuff:)  – Shucks, after all it is a holiday!!
  • 1 Tablespoon Old Bay Seasoning
  • 2 large onions
  • 5 large stalks celery
  • 1 large leek , split in half and cleaned to make sure the dirt is out:)
  • 5 large carrots, peeled with the two ends cut off

Method

Preheat oven to 325F.

Rinse off turkey and take out little package inside ( you can use all the contents but the liver for a lovely stock- saute the liver up separately for a lovely treat:).  Dry off the turkey with a paper towel.

WASH your hands:)

In a small bowl mix the Dukes Mayonnaise, room temperature melted butter & Old Bay Seasoning.  Set aside.

In a large roasting pan, place alternate carrot and celery with the leeks in the middle.  These vegetables will be your “roasting rack”- and they taste fantastic as a side dish.. as they will have soaked so much goodness up from the Turkey!!!

Then place the Turkey in the roaster pan on top of the “roasting rack”.  Tuck the wings under the turkey body.  Then tie the two legs together with kitchen twine.

Take the Old Bay Seasoning/butter mixture and rub all over the turkey.  Make sure you cover the entire turkey liberally:) Sometimes I need to make more of  the Old Bay Seasoning/ butter mixture:)

Then place the onions inside the turkey.

Then pour the stock all around the turkey.

Place in the oven at 325 F, for about 30- 35 minutes per pound.  Honestly, I just put mine in with a thermometer in the thickest part of the thigh and wait until it says 165 F.  Then I take it out of the oven, and tent a piece of foil over it.  Do not tightly cover with foil… tent with foil:)

Then take out of the roasting pan, place on cutting board and let the best man cut:)

You can make a gravy out of the drippings or if you are like me I already have my gravy made but I thin it out with the drippings:)

Then place the “roasting rack” vegetables in a dish.
